Snickerdoodle Ice Cream Sandwiches {Guest post by Ashley from Sugar & Cloth}

Hello, Ashley here from Sugar & Cloth! I’m so excited to be able to fill in with a quick recipe while Audrey is enjoying the new babe! Now that Summer is almost here I thought sharing something cool and simple that the kids could help make would knock out two birds with one stone. I’m sure everyone will agree that busy little ones with full tummies are happy little ones!

The best part is you can even make this recipe calorie friendly by skipping the ice cream and going for frozen cool whip instead. Plus they don’t melt quite as fast, but that’s totally up to you! 


Once you have all of your ingredients laid out, this little recipe is as simple as building a sandwich. All you have to do is spread the vanilla bean ice cream or cool whip on top of one cookie, then place another cookie on top of that.

Using a little dish filled with chocolate sprinkles, roll the edges of the sandwich in the dish to create the chocolate covered sprinkle edges, and you’re all set!
